As you can see, there's no layer of fat floating on top of the nihari, As many of you know, when we go out to eat it, we want the brain, marrow and floating oil on top, not. The name Nihari comes from the Arabic word 'Nahar', meaning day. 'Nihari' is eaten just after the morning namaaz(prayer). It is a hot and spicy meat stew. Mutton Nihari is a must on Eid.
Steps to make Mutton Nihari..:
- Take a cooking pot add oil and Mutton, cook for 2 mint upto chnge colour, add above mention spices (grind)and cook for 1 mint.
- Add flour mixture stir well, then add water as required and put pressure cooker lid upto 20-30 mints.
- After Mutton soft, cook until boil. In pan add kshmiri lal mirh and oil and fry for 2 mint.
- In serving bowl put nihari, garnish with coriander, green chilli, ginger and prepared lal mich tarka..
