- Prepare 1 1/2 cups Gram Flour (Besan)

- Get Ground to a Paste:
- Take 4 Green Chillies
- Take 1 Inch Ginger
- Take 10 Cloves Garlic
- Prepare 2 tbsp Water
It has crispy outer cover and yummy aloo/potato stuffing inside. The aloo masala used in the bonda can be made with many variations. Aloo bonda is a South Indian snack that is prepared in most households for evening tea-time nibble. Aloo bonda is also a popular street food in South India and is mostly served with coconut chutney.
Instructions to make Aloo Bonda:
- For Making the Aloo Filling: Wash and steam the potatoes. Remove the skin. Mash it with a potato masher and set aside.
- Next, in a blender add the green chillies, ginger and garlic and blend to a paste with the help of little water. Set aside.
- Heat oil in a pan. Add mustard seeds and allow it to crackle. Add asafoetida and curry leaves and fry for few seconds.
- Add the ground ginger-garlic-green chilli paste and saute it for few minutes on medium flame.
- Add turmeric powder and salt and mix well.
- Add the steamed and boiled mashed potatoes and mix well.
- Potato filling is ready. Allow to cool. Make lemon sized balls and set aside.
- For Making the Batter: In a mixing bowl, add gram flour. Add corn flour. Add turmeric powder, red chilli powder and salt and mix well.
- Add water little by little and mix well to make a bajji batter. The batter should not be too thick or too thin. Just before frying the vada, add a tablespoon of hot oil and mix well.
- Add baking soda and mix.
- Heat oil for deep frying before adding hot oil and baking soda to the batter. Add each dumpling to the batter and nicely coat it with the batter with the help of a fork. Using the fork, gently slide the coated dumplings in the hot oil and fry them. Fry till they turn golden brown all over.
- Remove the fried batata vada from the oil and keep them on kitchen towel to absorb the extra oil.
- Delicious Aloo Bonda is ready. Serve hot with chutney or any sauce of your choice or stuff it inside a pav with chutney and enjoy as a snack.
