Ingredients for Kathal Ki Biryani Recipe. Kathal Biryani or Jackfruit Biryani Recipe. Kathal biryani or Jackfruit biryani recipe - a mildly spiced dum cooked biryani made with raw unripe jackfruit, also called as kathal in hindi. How to Make Kathal ki biryani.
Instructions to make Kathal ki Biryani:
- First of all prepare the rice and soak the saffron strands in the warm milk.
- Wash rice and heat a vessel with water and all the dry whole spices with rice. Cook the rice.
- When the rice is cooked 80% then strain the water from the rice and spread the rice on a big size plate.
- In the meantime wash and chop the raw Jackfruit and fry them in oil till golden brown in colour and keep them aside. Also fry the cashew nuts and raisins.
- Heat a vessel with ghee and put all the dry whole spices in it.
- Saute it for 30 seconds and then put the chopped onion in it. Cook it till the onion becomes transluscent and then add the ginger garlic chilli paste in it.
- Cook till the raw smell of ginger and garlic has gone. - Then add the tomato puree along with the curd, spices and salt.
- When the masala release oil then add the fried Jackfruit in it and cover it for 5 minutes.
- Then add the prepared rice over it and put the soaked saffron milk, fried dry fruits and fried onion over it.
- Cover the lid and cook it on low flame for 10-15 minutes. - Then your kathal Biryani is ready.
- Garnish with chopped coriander leaves and serve hot with raita.
Wash rice and boil with water and garam masala and keep it aside. Boil jack-fruit with pinch of salt, and turmeric powder in water and sieve in colander.
