To save time, you can also pick up sweet potatoes already peeled and cut into chunks at many local grocery stores.
- Heat olive oil, add onion and cook, stirring, until it just begins to brown, 2 to 4 minutes. Add garlic and cook, stirring, for 1 more minute. Stir in green chilis, ginger, tomato juice, and allspice. Adjust the heat so the mixture boils gently; cook for 10 minutes.
- Meanwhile, blend half of the sweet potato chunks, the peanut butter, and the vegetable broth in a food processor, or use a hand blender to puree those ingredients together.
- Add the rest of the sweet potato chunks to the pot, cook another minute, and then add the puree mixture.
- Let it gently simmer another few minutes so all the flavors blend together. If desired, I like to chop up some peanuts and/or cilantro to top it off!
Put the other half in a food processor or blender along with broth and peanut butter. Transfer the purée to the pot and stir to well combined. Thin the bisque with water, if desired.
