Egusi(Melon seed) NB not water melon. EGUSI PASTE Add the bitter leaf. Egusi is traditionally served with a starch.

  1. Wash the bitter leaf with salt twice each at least 2minutes to remove dirt.
  2. Boil the meat and stockfish,with maggi cubes,salt and onion.
  3. Onces is tender,pour in 4cups of water and palmoil and cover it to boil for 5mins.
  4. Then mix the blended egusi with water form a paste a bit watery and pour in.
  5. Cover to boil for 20minutes.add ofo and stir very well to avoid the ofo forming lumps.
  6. Boil for 5minutes,add crayfish,salt,fresh pepper and maggi cubes.
  7. After 8 more minutes rinse the bitter leaf and add.boil for 2minutes and the soup is ready.

Possible starch options include Iyan (Pounded yam), Garri (fermented cassava), elubo (fermented yam) or semolina.
