Sattu is a type of flour, mainly used in India and especially the East Indian state of Bihar, consisting of a mixture of ground pulses and cereals.

The ingredients needed to make Sattu Litti:
- Make ready 1/2 cup Sattu (chana flour)
- Take 2 onions finely chop(use half in Litti and half in Chokha)
- Prepare 2 tsp ginger chopped
- Take 2 tsp garlic chopped
- Get 3-4 green Chilli chopped
- Take 2 tsp mango pickle masala
- Prepare to taste Salt
- Prepare to taste Red Chilli
- Prepare 4 tbsp Sarson(mustard) oil
- Prepare 2 cups whole wheat flour
- Prepare 2 tsp Ajwain/carom seeds
- Take as needed Water
- Take 1 Brinjal
- Get 1 tomato
- Take 2 Boiled aloo (potatoes)
Sattu was originally made of roasted gram flour but has now evolved to include other nutritious flours like barley, wheat etc. It is prepared in several ways including parathas, laddoos, litti chokhas and. Sattu is a flour made from roasted Bengal Gram. Steps to make Sattu Litti:
- For Litti covering. Add salt and ajwain to whole wheat flour, knead a dough by adding water as needed. Keep aside covered to rest.
- For Litti stuffing:Take Sattu in a bowl add salt, onion, ginger, garlic(you can skip it also), mango pickle or any other pickle masala, green chillies, Sarson oil(raw oil shd be used for traditional taste). Mix nicely and make small balls and keep aside.
- Make small balls of dough, flatten it and stuff Sattu ball, now cover it nicely. Heat Appe pan and brush little oil in cavities and cook Litti in Appe pan cover with a lid. The flame shd be slow. Keep on rotating the Litti till it's cooked from all sides. You can cook over fire on a papad rack, fry or bake it. I like to make in Appe pan.
- For Chokha :Roast Baingan and Tamatar on fire using papad net. Remove the skin and mash and chop roasted Baingan and Tamatar, mash boiled aloo. Now add salt, Chilli powder onions, ginger, garlic, green chillies and raw Sarson oil. Mix nicely. Your Chokha is ready.
- How to serve or enjoy Litti Chokha. Heat some Desi ghee and dip Litti in it, crush and enjoy with Chokha. You can brush with ghee if don't wish to dip. It's yum with ghee but you can have without ghee also. Just crush and enjoy eating Litti Chokha with hands.
