- Take For litti dough-
- Make ready 2 cups whole wheat flour
- Take 2 tbsp Ghee or Refined oil
- Prepare Dahi- 2-3tbsb (for soft litti) (optional)
- Prepare 1/4 tbsp Baking powder
- Make ready 2 pinch Baking soda
- Prepare Salt as per taste (very light salt)
- Get Water for kneading dough
- Prepare For Litti Filling-
- Get 1 cup sattu/roasted gram flour
- Make ready 2 tbsp Lemon juice
- Prepare 1 tbsp Ajwain (carom seeds)
- Make ready 2-3 green chilies (finely chopped)
- Take 10-15 Garlic Cloves (chopped)
- Get 1/2 cup coriander leaves (finely chopped)
- Take 1 tbsp Mustard oil
- Take Salt as per taste
- Get For Chokha-
- Get 2 Eggplant/Brinjal (medium size)
- Get 4 tomatoes (medium size)
- Take 4 boiled potatoes (medium size)
- Get 1/2 cup onion (optional)
- Make ready 2 green chilies (chopped)
- Get 1/3 cup coriander leaves (finely chopped)
- Get 1 tbsp Garlic (chopped)
- Take 1 tbsp Ginger (chopped)
- Get 2 tbsp Mustard oil
- Make ready Salt as per taste

Instructions to make Litti Chokha in Appam Pan:
- For Litti dough- Add all the ingredients into wheat flour and knead it into a soft dough. Cover and keep it aside for 20 minutes.
- For Litti Filling- Mix all the ingredients and keep aside.
- For Assembling Litti- • Divide the dough into small balls. Roll it and make it into bowl shape (edges are little thinner than the center)
- Place about 2tbsb Sattu mixture in the middle of the dough and close it. Remove excess dough.
- Now heat the Appam pan on medium & grease each moulds with little ghee. Place the Littis in Appam pan. Cover and cook on low flame for 3-4 minutes.
- After 3-4 minutes check it. Turn it and let the other side roast for another 3-4 min on low-medium flame until golden brown.
- For chokha- Take Eggplant & tomatoes washed and dried well. Grease them with little Mustard oil. Then put over a net and roast it on low-medium heat. Time to time flip it and roast all around till skin turns black.
- Once roasted take out the eggplant & tomatoes in plate. Peel the skin after cooling (it takes 15-20 minutes to roast). Add boiled potatoes and mash well with a potato masher.
- Add onion, ginger, garlic, chilies, coriander, mustard oil and salt. Chokha is ready.
- For serving- pour some hot ghee over Littis and serve with Chokha.
