The ingredients needed to make Litti chokha:
  1. Make ready 2 cups whole wheat flour/ aata
  2. Get 1/2 tsp salt
  3. Take 1 tbsp ghee/ oil
  4. Get as required Water to Knead the dough
  5. Prepare for litti stuffing-
  6. Take 1 cup sattu (roasted gram flour)
  7. Prepare 1/2 tsp Jeera /cumin seeds
  8. Prepare 2 tsp chopped green chillies
  9. Make ready 6-7 garlic cloves
  10. Get 1 Tsp chopped ginger
  11. Prepare 2 tbsp chopped coriander leaves
  12. Make ready 1 Tsp chat masala
  13. Take As per taste Red chilli powder (optional)
  14. Prepare 1/4 tsp black salt
  15. Get as per taste Salt
  16. Make ready as per taste Lemon juice (optional)
  17. Get 1-2 tsp water to sprinkle
  18. Get 1 tsp Mustard oil
  19. Take for chokha–
  20. Get 1/3 cup chopped onion
  21. Take 1 cup chopped tomatoes
  22. Get 3-4 garlic cloves (chopped)
  23. Take 1/2 tsp chopped green chillies
  24. Get as required Chopped coriander leaves to garnish
  25. Get 1/2 tsp lemon juice
  26. Get 1 tsp Mustard oil
  27. Get as per taste Salt/ black salt

It can be had for lunch, dinner or you can make it on your holidays and you will surely love it. Litti is similar to Bati in appearance but. Litti Chokha is a delicacy from the state of Bihar made with stuffed whole wheat dough balls with roasted chana dal and spices inside. These stuffed balls are known as Litties are usually roasted over.

Steps to make Litti chokha:
  1. For Litti dough- In a mixing bowl, take 2 cups whole wheat flour/atta (240 grams) and 1/4 teaspoon salt, 1 Tsp crushed ajwain. Also add 1 tablespoon ghee or oil.
  2. Now add water in parts and knead to a smooth soft dough. I added 3/4 cup water. Depending on the quality of flour, you can add 3/4 to 1 cup water.
  3. Knead till smooth and soft. Cover the dough and keep aside.
  4. Litti stuffing-Take 1 cup sattu/roasted gram flour in a mixing bowl or pan.
  5. Now take 1/2 teaspoon heeng, 1/2 teaspoon jeera, 1 to 2 teaspoons chopped green chilies, 1 teaspoon finely chopped ginger, 1 teaspoon finely chopped garlic, 2 tablespoons chopped coriander leaves and 1/4 teaspoon black salt, 1 tsp chat masala Also add regular salt as per taste and grind them to make a powder
  6. Combine everything well, and Sprinkle 1 to 2 tablespoons water all over and mix the flour with water evenly. Do add more water if required. The sattu stuffing mixture should not be too dry or too wet. If the mixture is dry.
  7. Stuffing & shaping litti- - - After 30 minutes, now make small or medium sized balls from the dough. - Place 2 to 3 tablespoons of the stuffing in the center,Pleat and then join the edges. Press the joined part and lightly roll the stuffed dough balls in your palms, so as to get a round shape. Keep aside.
  8. Prepare all stuffed littis this way and place them on a baking tray, which has been greased with some oil. Do grease baking tray or grill well, otherwise the littis can stuck to the tray.
  9. If you're using grill you don't need to flip littis,but if you're using tray flip littlis accordingly.
  10. Brush some melted ghee all over or place it into a bowl full of ghee, and then transfer to a serving tray.
  11. Baigan bharta chokha- Rinse 1 large baingan in water. Place it on a grill on a stove top or you can place it directly on fire.
  12. Roast the baingan till it's completely cooked and tender. With a knife check the doneness.
  13. Remove the baingan and immerse in a bowl of water till it cools down.
  14. Add the chopped baingan in a mixing bowl.
  15. Then add ⅓ cup chopped onions, 1cup chopped tomatoes, ½ teaspoon chopped green chilies, ½ teaspoon chopped garlic and 1 to 2 tbsp chopped coriander leaves.
  16. Add 1 teaspoon mustard oil. If you want, you can add ¼ to ½ teaspoon lemon juice for a slight tang. Season with salt.
  17. Mix everything very well, or you can cook them in a pan for about 5 min if you don't like the raw bharta, bharta is ready sprinkle some coriander leaves and serve.
  18. Littli chokha is ready with a authentic taste serve with some onion, green chutney, red chutney, Raita and enjoy.
