  2. Get Livers of 5 chickens
  3. Take 2 medium fresh tomatoes
  4. Take 1 big Onion
  5. Make ready 3 attarugu
  6. Take 2 red bell pepper
  7. Prepare Spices
  8. Get 2 tablespoons Olive oil
  9. Make ready 3 seasoning cubes

Return liver to wok and add sauce mixture. Stir-fry rapidly to prevent the cornstarch from clumping. Place yam fries into a bowl. Liver and Kidney Sauce is simply Liver and Kidney cooked in a light Caramelised Onions sauce.

Steps to make Fried Yam and Liver Sauce:
  1. Wash and chop Tomatoes, peppers and Onion. Set aside.
  2. Wash livers, add 2 cups water and pre boil with a pinch of salt and part of Onion for 5mins. Bring out livers and dice into small pieces.
  3. Return livers to pot, add in all other ingredients and allow to cook till stock dries up(not totally) and begins to fry.
  4. Put off heat and serve with fried yam.

You do not have to use Liver or Kidney for this sauce, any other protein will do just fine. Liver can be fried, baked or made into a spread.
