- Prepare 250 gm cauliflower
- Prepare 2 medium size potato

- Take 1 tbsp garam masala
- Prepare 1 tbsp Turmeric powder
- Prepare 1 tbsp amchur powder

Aloo gobi or cauliflower potato masala is a famous dish from the northern part of India, Pakistan and Nepal. Cauliflower and potato makes a perfect combination with chapati, paratha or naan. As it is a dhaba style recipe, It is made with extra oil in it. It is made with the regular Indian spices available at home.
Instructions to make Dhaba style cauliflower masala:
- Prep vegetables by washing & cutting them to size big or small as preferred
- Heat up a wok. Add mustard oil,less or more as per personal preference & the non-stick quotient of your wok/pan
- Crackle a tsp of jeera,add hing,ginger grated or chopped
- Now add cauliflower & potatoes. Add little salt. Keep the flame on high. Cover and cook till the veggies start browning.
- Add all the dry masala except amchur. Add some water for the masala to cook.
- As soon as the veggies become tender (cut a piece with your spatula) add tomatoes.
- Let the tomatoes become tender,then add methi & amchur powder. Give it a good toss & vola ready
Add all the dry masalas ( red chili powder, coriander - cumin powder, garam masala ) and ginger garlic paste to it. Mix them well and cook for two minutes stirring in between. Toss it gently with the masala. Sprinkle garam masala along with fresh coriander leaves. Dhaba style Aloo Gobhi masala is ready to serve with hot chapati, parantha or rice and dal.
