- Clean and sanitize all your vegetables.
- Chop mushrooms n put them separately.
- Cut tomatoes into big cubes and put them separately.
- Cut all other vegetables into big cubes and put them together but leave one onion aside that you will use to fry.
- Cut the onion that you had left aside into rings/ julienes.
- In a frying sufuria, add 2 tbsp cooking oil and let it heat a bit. Add onions and let them turn to almost golden brown. Add some salt just to taste.
- Add your mushrooms and cook them for 10 mins. Do not overcook them please because the more you cook them, the more you kill the nutrients.
- After 10 mins, add the mixed vegetables and leave tomatoes aside.
- Cook them for 10 mins then add tomatoes. Cook for 5 mins then add tomato concasse, abit of black pepper and abit of ketchup. If you don't have concasse, add a little bit of water mix it with tomato ketchup.
- After adding concasse and ketchup, simmer on low heat for 5 mins then remove it from the heat and serve while hot. Enjoy.
- NOTE: 1. Concasse is like blended tomatoes with water. As in, you blend tomatoes mixed with some water. You can fry it with onions, some black pepper, ketchup/ tomato paste to make tomato gravy.
- NOTE 2: You can replace mushroom with some beans which are also a source of protein to balance the diet.
