Steps to make Biryani and special kheer:
- Sab se pehle chawalon kou dho kar bhigo dain, ek ghantay ke liey.
- Iskay baad ek khulay pateelay mein paani garam karain aur josh aanaay par chawal daal dein aur sath hi teezz paat, kalaaa zeera aur namak or 1 lemo nichor kar daal dain. Chawaal ek kanni boil hounay par paani nikal kar alag kar dein.
- Chicken kou achi tarhan dhoo lain.Tip aur phir 2 glass paani mein namak aur sirka daal kar is mein chicken dein 10 minute. Phir chicken kou strainer mein nikal kar dry kar lein.
- Ab dry ki hui chicken kou yellow colour laga kar thori dair ke liey takh dain, doosri taraf aalu kou dhoo kar achi tarhan, uskay baraah pieces bana lein. Aur uspe bhi zarday ka rang laga kar side par rakh dein
- Piyaaaz kou lachaay daar kaat lein aur timataar kou bhi.
- Ab ek bartan mein oil kou garam karain, usmein pehley chicken kou fry kar lein 10-15 minutes and nikal lein. Iskay baad aalu kou bhi 10-15 minute fry ke ke nikaal lain.
- Baaqi bachay huay oil mein piyaaz kou achi tarhan sautay kar lain. Jab golden brown hojae toh usmein lehsan adrak ka paste daal lein aur acha tarhan fry karain. Sath mein saabit garam masalaa daal dein aur timaatar jou kaat kar rakhaay hain woh bhi daal dein.
- 10 minute baad, timataar jab gull jae toh ismein namak, laal mirch, dhania, haldi, pisaa garam masala, daahi, aalu bukhara daal kar achi tarhan miz karain aur sath hi fry kia hua chicken aur aalu mix kar dein. 5 minute ke liey dhakkan laga dein.
- 5 minute baad 4 se 5 haari mirchain kaat kar daal dein, sath hi jaifal jawatri ka powder daal dein aur jab masala achi tarhan mix hojae toh chooola band kar dein.
- Ab ek khula bartan lein, tayyar kia hua maslaa is bartan mein daalain, sath hi ek timaatar ke gol katlay banaen, poodinay ki pattiyaaan lein aue 2 se 3 chammack dahi le kar iskou apas mein mix kar lein aur jou maslaa aap ne pateeley mein tayyar kia hai us par garnish kar dain.
- Ek kanni ubalaay huay chawaal is par pheela dain, ab chawalon par kuch drops khewray ke daalain. 2 chammach ghee uspr phela dain, sath hi fried onion is par phelaa dain aur sath hi food colour is par chiraak dain. Ab half cup is par fresh milk daal dein. Malmal ka kapra ya akhbar rakh kar is kou dhaak dein aur 30-35 minute dum par rakh dein.
