- Make ready 100 gm Ginger
- Get 2 tbsp Jaggery grated
- Get 1 tbsp Chilli powder
- Take 1 tsp Coriander powder-
- Get Tamarind pulp -gooseberry size
- Prepare 3/4 cup Water
- Take Salt
- Take Mustard seeds
- Prepare Dry red chilli
- Make ready 2 tbsp +1tsp Coconut oil

Steps to make Inji puli /sweet and sour ginger pickle:
- Peel and cut into roundels..
- Soak tamarind in water
- In a pan take 2tbsp oil and fry the ginger pieces till golden and crisp
- Crush them using a mixer grinder….
- Into the left over oil add fry chilli powder and coriander powder till you get a nice aroma
- Squeeze the tamarind and discard the pulp.Now pour tamarind juice and grated jaggery. let it come to a boil.
- At this stage add the crushed ginger and stir nicely till everything comes together and you get a thick mixture…
- In another pour 1tsp oil splutter mustard then add red chillies and curry leaves…
- Pour this onto inji puli and mix nicely
Inji Puli is an instant ginger pickle which is also part of Onam Sadya. Onam is celebrated big time in Kerala and a huge vegetarian feast is served on a big banana leaf for. Puli inji is a traditional pickle highlighting the sweet, tangy and spicy flavors of ginger, tamarind and jaggery. Now, the tanginess of this puli inji (ginger pickle).
