Bún riêu is another very popular and flavor-packed Vietnamese rice noodle soup, with soup flavored It features tofu usually, but the unique addition to this soup is the "riêu" or meatballs, made of pork.

The ingredients needed to make Bun Rieu:
- Take Stock
- Get 8 medium Tomatoes
- Get 1/2 bunch shallots, mostly white part
- Get 300 grams Pork
- Prepare 2 piece bun rieu stock cubes
- Take 4 1/2 liter water
- Take 4 tbsp fish sauce
- Get 1 tbsp shrimp paste
- Make ready 1 tbsp crab paste
- Prepare 1 tbsp tomato paste

Original Bun Rieu is very complicated and demanding to cook, but today we make a very simple and quick version of this dish at an affordable price, so that everyone can do it at home! Bun Rieu is one of my favorite soups to make, because it is so simple and easy to whip up. It basically consists of two steps - making the pork broth, and adding the rieu mixture to the soup. Instructions to make Bun Rieu:
- Cut tomatoes into quarters
- Chop shallots
- Cut pork into medium size pieces or if your using bones, leave as is.
- Heat pot, add olive oil, tomatoes and shallots. Cook until soft. Then add pork and continue cooking.
- Add water, dried shrimp, bun rieu stock, fish sauce, crab paste, shrimp paste and tomato paste. Bring to boil, then reduce to simmer.
- Rieu - heat saucepan, add chopped garlic, crab meat and crab paste. Fey for a minute or so
- Beat eggs and add fried rieu, stir to combine
- Add tofu to stock
- Once you are happy with stock taste, pour the rieu in slowly. Try not to stir as it will break the rieu. The rieu will cook in the stock after several minutes.
- Boil vermicelli until soft and drain
