Frankly, this meal doesn't appear often in my menu but anytime I decide to Plantain porridge is easy to prepare, it takes the same process as Porridge Yam, although, with a little twist and slight changes in ingredients. Plantain porridge is a Nigerian vegetable stew made with the starchy cousin of common bananas. Plantains are simmered until tender in a flavorful broth along with assorted vegetables and sometimes fish, beans or meat. There is no one recipe for this nutritious dish.

Instructions to make Beans and Plantain Porridge:
  1. Note, it'll take hours to cook this beans on a regular heat. But with Pressure pot, 30mins softens it.
  2. Pick and wash beans then put in pressure pot and cook for 15mins.
  3. Put off heat and allow pot to cool before opening. Strain out beans water, replace with clean water and return to cook for 15mins more.
  4. While beans is on fire, chop vegetable, pound or blend pepper and onions. Set aside.
  5. In your pot on fire, put in Palm oil and allow to heat up a bit.
  6. Pour your cooked beans(with a little water) and boiled goat meat into hot oil, stir fry for 5mins. Add your diced plantain, pepper, Onions, crayfish and spices. Mix well and allow to cook for 3mins.
  7. Add in your Aleho and Scent leave to cook for 2mins, then put off heat.
  8. Serve hot and enjoy.

Unripe plantain porridge can be mashed and given to babies being introduced to solids. A handful shred Ugu, uziza vegetables or scent leaves. Nigerian Beans Porridge or Nigerian Beans Pottage.
