- Wash & cook the rice.Keep a side.
- To make vangi powder,dry roast all the masala ingredients & grind into fine powder.
- Pour oil in a pan,add cumin, cardamom pods, chillies & saute.
- Add chopped brinjal & wait till they are cooked.
- Add vangi powder,tamarind pulp, turmeric powder,salt & fry.
- Now add cooked rice & mix it well. turn off the stove
- Note : you can use tamarind or lemon water based on your taste.
Makes a perfect one pot dish, lunch box favorite too. This is my favourite, because I am a big fan of brinjal. When I was staying in hostel, enjoyed this one in our hostel mess.
