  2. To make vangi powder,dry roast all the masala ingredients & grind into fine powder.
  3. Pour oil in a pan,add cumin, cardamom pods, chillies & saute.
  4. Add chopped brinjal & wait till they are cooked.
  5. Add vangi powder,tamarind pulp, turmeric powder,salt & fry.
  6. Now add cooked rice & mix it well. turn off the stove
  7. Note : you can use tamarind or lemon water based on your taste.

Makes a perfect one pot dish, lunch box favorite too. This is my favourite, because I am a big fan of brinjal. When I was staying in hostel, enjoyed this one in our hostel mess.
