  2. While the rice is cooking,cut the brinjals vertically in long pieces.As soon as you cut brinjals,place it in a bowl containing water.Add some salt in that water so that colour of brinjal does not change.Make sure water is sufficient enough covering the brinjals.
  3. Heat oil in kadai.Add mustard seeds.After it splutters add red chilli,curry leaves and hing.
  4. Remove the brinjals from water and add it to the kadai.Mix it well.
  5. Add turmeric powder and salt as per taste.Stir well. Keep stirring at intervals.You can just sprinkle some water over it.
  6. Once it is almost half cooked add Vangi bath powder.
  7. Mix well and cook till brinjal is cooked well.
  8. Meanwhile allow the cooked rice to cool.Spread it over a big plate.So that rice gets separated well and becomes fluffy.
  9. After the brinjal sabji is done.Keep the kadai down.
  10. Add rice in parts and mix it gently and evenly.So that the rice and brinjal sabji gets mixed very well.
  11. Serve Vangi bath or Brinjal rice with papad.
