  8. Now with the help of scraper cut the dough into equal pieces (precisely 30gms each),You may use weighing scale to make sure all the measurements are right.
  9. Roll them in your hand, Make sure the rounds are intact leaving no space at the bottom. Place them gently on the baking tray keeping some space between two soft rolls, Spray/dabble gently some water on the soft rolls and place the tray on top of the oven for 15 minutes.Process is called proofing.
  10. Once proofing is done,brush milk and sugar mixture on the soft rolls to ensure good color and texture. place the tray in the oven and let it bake for about 30 minutes. Change the side after 15 minutes.
  11. Bring them out from the oven and let them cool, always check the bottom of the roll(golden brown) to ensure perfect cooking.
