- Get 1/2 cup Besan
- Make ready 1/2 tbsp Oil (sunflower oil)
- Get as required Water (to make the batter)
- Prepare as required Oil to fry the boondis
- Make ready as required Ghee (clarified butter)
- Prepare as required Dry fruits (almond, cashew, magaj etc.)
- Prepare Few Saffron strings
- Prepare 2 tablespoons Water (to dilute the honey)
- Prepare 1/2 tsp Cardamom powder
To prepare Sweet Boondi/Meethi Boondi Recipe, take gram flour/besan in a sifter and sieve it. Sweet boondi is my favorite since childhood. Steps to make Sweet Boondi With Honey (without sugar):
- Add little water at a time and make a semi-thick batter (not too thick, nor too thin) add half tablespoon oil to the batter. Rest the batter for 10 minutes.
- Check consistancy if needed add little water more to the batter. Heat oil. Add the batter in hot oil through a jhara (a special strainer to make boondi). Fry for 40 seconds and remove from oil and place it in a kitchen towel / tissue paper. Continue the process for rest of the batter.
- Dilute the honey with little water (2 tablespoons water) keep it separately. Add saffron in 1-2 tablespoon warm water and keep it separately too.
- Heat another pan add 2 tablespoon ghee and roast the dry fruits. Add the cardamom powder at the same time and switch off the flame. In that hot pan add diluted honey and saffron water. Mix it. Then add all the boondis. Mix again.
- Cover with a lid and let it sit for few hours then serve.
- Note : You can add rose or kewra essence. Don't add too much water to dilute the honey as honey has it's own moisture. With extra water boondis will be mashy and without help of water boondis won't properly soak all honey so balancing the amount of water is the core part of this recipe. If by any chance water seems extra you can dry it by cooking it little more but honey is preferred to not be cooked or heated.
- P. S. : You can adjust the amount of honey according to your sweetness preference but maintain the water honey ratio.
- Point to note : because we have used honey in this recipe, the final texture of this dish won't be same like with sugar. When cooled the sweet boondi will be still soft, there won't be any sugar crystal like layer around the boondis.
