- Heat the oil
- Add ginger and garlic paste
- Shan nihrai add of 1/4 cup water
- Fry to 5 to 6 minutes
- Add meet

- Add 4 to 6 liters water on low to medium flame
- Cover and cook for 4 to 6 hour
- After 4 to 6 hours water is reduced and meat is tender
- Check if meat is soft
- Separate the bone's from the meat
- Leave the meat in water
- When bone's cool down then take out the bone marrow
- Add the bone marrow and meat to the same water
- Add some water to chaaki ata to make a paste then add it to nihari water
- After adding ata paste boil nihari water on high flame for 15 minutes
- Sprinkle fried onions to nihrai
- Add heated oil to nihari for tarka
- Nihari is ready to be served with naan
