Just like my ignorance with the canned sweet corn, I. Beans and corn pottage also known as adalu is a popular Nigerian dish. It's a delicious fusion of stewed beans and corn. It's nutritious especially when you don't add too much palm oil.
Instructions to make Beans with corn/maize(Adalu):
- Remove corn from stalk
- Cook corn for 10-15minute
- Remove dirt from beans, rinse with hot salted water
- Add beans and 1 big onion to corn cover lid and cook for 30min(pressure pot)
- Allow to rest a while before opening the lid, check beans and press to know if its soft enough
- Add salt, crayfish, ground pepper, and palm oil. Cover lid and allow to cook for 10 more minute.
- Enjoy your meal hot
This was one my favorite things to eat growing up, I have intense love for beans and corn so this is a perfect marriage. This combination is known as adalu among the Yoruba people.
