The ingredients needed to make Chakka Varatti:
  1. Take 1 Jackfruit (ripe)
  2. Get 1/2 Kilogram Jaggery
  3. Get 2 Cups Ghee

Instructions to make Chakka Varatti:
  1. Separate the jackfruit flesh pieces and remove the seeds. Chop the pieces into smaller pieces. Cook it in a little water till it turns soft.
  2. Allow the cooked jackfruit pieces to cool down and then grind it into a fine mixture.
  3. Melt jaggery in a little water and strain it.
  4. Take a wide mouthed vessel and add the jackfruit pulp and ghee to it and heat it. Add the melted and strained jaggery to it and keep on stirring till the consistency is very thick.
  5. Cool it and preserve it in a bottle.

Chakka pradaman is made using chakka varatti. Chakka Varatti (Jackfruit Preserve): A traditional way of preparing Jackfruit preserve in Kerala that stays good for an year. It is used to prepare ada, pradhaman, unniappam, etc. Making chakka varatti/ Jackfruit preserve is a tedious job, if you are lazy don't ever try to do it. I have seen my grandma to start early in the morning and finish by the late night.
