Repeat the potato, cream, shallots, salt & pepper and cheese steps 2x more (you should have about 3x potato layers).
- Cover the casserole dish with aluminium foil and bake in 180○ Celsius for 60mins. Once the 60mins is up, remove the aluminium foil and bake for a further 15mins until the cheese on top goes golden brown.
- Remove from oven and let it rest for 10mins or so and it will be extremely hot. Serve with meat or winter vegetables.
