The paneer satay couldn't be easier to make - start by frying up the cheese (I poked mine onto skewers to make it look fancy, but you can skip them if you don't have any skewers to hand). - Take 300 gms malai paneer cut it into long rectangle and insert satay stick in the center, sprinkle some salt over it and keep it aside.
- In a non-stick pan, take butter, once butter melts add garlic and cook it for 20 seconds, then add chopped parsley and again cook it for another 20 seconds.
- Now add peanut butter to it, once you add peanut butter it will start melting, cook it for 10-15 seconds, then add water and mix well.
- Now add peri peri masala, soy sauce, salt, vinegar and chopped peanuts, mix well.
- Adjust consistency of the sauce using more water if required, remember it should coat the paneer well.
- Now slowly holding the satay stick coat each paneer slice in the sauce and cook it in the sauce for 1-2 minutes.
- Switch off the gas and take the paneer satay in a serving plate, garnish with bell peppers, parsley and sprinkle some chopped peanuts over it. Serve hot.
