- Prepare 1 cup wheat flour
- Take 1 cup maida sieved

- Make ready 1 tsp garam masala
- Take to taste Salt

Instructions to make Poori Basket with chhole:
- For poori:-collect all ingredients
- Mix all ingredients for poori and form a soft dough adding enough water.
- Leave for 1 hour. After the dough has risen well, knead and make into small balls.
- Roll out in a small poori and deep fry in hot oil.
- For chhole:- soak chana with teabags In 6 cups of water overnight.
- Add soda salt and boil till chhole become soft.
- Collect all ingredients for chhole.
- Heat oil in a pan and saute tejpatta, whole masala and jeera.
- Add ginger garlic paste and onion and fry for 2-3 minutes.
- Now add tomato and saute for 2-3 minutes.
- Add all powdered masala and mix well.
- Switch off the flame and cool down mixture and paste them in mixture grinder.
- Heat oil in a pan and saute paste for 5 minutes.
- Add boiled chana and mix well add water as required. Stir gently and hara dhaniya and remove from heat.
- Remove from heat and serve with poori
The poori they make is so good and it is far beyond any poori I have had in the US. I just learned today that they make poori in two distinct ways.
