A savory steamed leaf roll recipe , authentic patra with arbi leaves rolled with a gram flour or chana dal atta and spice powders is simply mouthwatering. Instructions to make Arbi patra roll (patod):
- First wash and dry all leaves and trim their tundals with knife. keep aside.
- Take a pan heat oil at smoking point and cool down for 15 minutes. when little hot add ajwain and hing
- Meanwhile take a big thal or prant add all besan all type of masalas(which are mentioned above) and lukewarm ajwain oil. all mix well and add water to make medium batter type
- Now take 1 leaf and spread besan batter with hands…. set 2nd leaf bt opposite direction… spread again besan batter then set 3 leaf spread besan batter then 4th and then fifth….. fold both sides and then roll it. immediately bind this roll with cloth strips
- Bind all rolls with same method - Take a pressure cooker add 1/2 glass of water place a channi in it…. place all rolls in it and cook for 1/2 hour at low flame
- Cool down and place all rolls in refrigerator for 2 hours at least
- Cut into 1/2 inches and shallow fry both sides on tawa adding little oil
- Garnishing with sesame seeds and enjoy with any type of pranatha or fulka?
