Aloo Poori or Puri Sabji is a North Indian breakfast-lunch recipe. Sabji is a spicy potato dish which is served with puffed up, deep fried Indian bread poori. I have been making this breakfast 'aloo poori' aka 'poori sabji' often lately. But I realized that I haven't.

- First grind the soaked dal.
- Take a large bowl add all the ingredients for poori mix well knead nice dough.
- Keep aside for 15 -20 minutes.
- Then make small balls and roll them and deep fry the poories till golden crisp.
- Drain out on kitchen tissue.
- For sabji:- peel the boiled potatoes cut into cubes.
- Take a pan or kadhai add oil, fry cumin seeds and fenugreek seeds for a second.
- Add tomato puree and ginger paste saute for 6-7 minutes.
- Add all spices mix well.
- Add 1.5 - 2 cup water.
- Add potatoes stir well.
- Add salt and simmer for 10 minutes then heat off.
