Posto (white poppy seed) is a very popular ingredient in Bengali kitchen. It is widely used in Indian cuisine also. The soft-boiled eggs in a creamy poppy seeds gravy with a touch of spices is a treat to taste buds. Instructions to make Dim Posto-Sorshe (Egg cooked in Poppy-Mustard Seed Paste):
- Make a fine paste of poppy-mustard seeds and 2 chopped green chilies together and keep aside.
- Put vertical slit on the eggs so that the flavour of the spices can go inside.
- Rub the eggs with little turmeric powder and salt and shallow fry them in heated oil. Once they are fried, remove from the oil and keep aside.
- Heat oil in a pan and add fenugreek and dried red chillies. Stir for 30 seconds.
- Add chopped tomato and stir until it becomes soft.
- Now, add the poppy-mustard paste, turmeric powder, slitted green chillies and salt.
- Add 1 cup warm water, mix well and cover the lid. Bring it to boil.
- Now, add the eggs and cover the lid again. Cook it on medium flame for around 10 minutes.
- Your Dim Posto-Sorshe is ready to be served now.
Traditionally this curry is cooked with mustard oil and a very less quantity of turmeric and chili powder. Posto is a classic Bengali delicacy and egg curry is a part of our regular meals. This dim posto is a fusion of these two Bengali classics and it's simply fantastic! Posto is the Bengali name of poppy seeds or khus khus as called in hindi and the semi-dry curry made with the poppy seeds paste is. The Egg Curry or an Egg Burji is usually received with no complaints on the dinner table.
