The ingredients needed to make Arbi patra:
  1. Get 1 1/2 cups Gram flour (besan)
  2. Get 1 teaspoon Ginger paste
  3. Prepare 1 teaspoon Green chilli paste
  4. Get 12 arbi ke patte
  5. Get 1 teaspoon Red chilli powder
  6. Get 2 teaspoons Coriander powder
  7. Take 1 teaspoon Cumin powder
  8. Make ready 2 teaspoons Sesame seeds (til) crushed
  9. Prepare 2 tablespoons Tamarind pulp
  10. Take 2 tablespoons Jaggery (gur) grated
  11. Take to taste Salt
  12. Take 2 tablespoons Oil
  13. Get as needed Fresh coriander leaves a few sprigs
  14. Take 1 teaspoon Mustard seeds
  15. Take 1 tablespoon Sesame seeds (til)
  16. Take 2 tablespoons Coconut scraped

Arbi patra (made with steaming colocasia leaves layered with gram flour batter ) is an ideal tea time snack Wash arbi leaves thoroughly in running water. Instructions to make Arbi patra:
  1. Heat sufficient water in a steamer. Trim the stems of the arbi leaves an roll a rolling pin on the back side to soften the leaves.
  2. Place besan in a bowl, add ginger paste, green chilli paste, red chilli powder, coriander powder, cumin powder, turmeric powder, crushed sesame seeds, tamarind pulp, jaggery and sufficient water and mix into a thick paste. Add salt and mix again.
  3. Apply this paste all over the back side of an arbi leaf. Place another leaf over this with it's pointed end opposite the first one. Apply the paste over this too.
  4. Fold the sides slightly and tightly roll. Keep the rolls on a perforated plate and keep it in the steamer. Cover with the lid and steam till done.
  5. Take the rolls out and let them cool completely. Slice into roundels.Heat oil in a non stick pan.
  6. Chop coriander leaves. Add asafoetida, mustard seeds and sesame seeds to the oil and when they splutter add the patra slices and toss.
  7. Transfer onto a serving plate, garnish with coconut and coriander leaves and serve hot.
