The ingredients needed to make Arbi patra:
  1. Prepare 20 Arbi leaves
  2. Make ready 4-5 cabbage leaves
  3. Make ready 4-5 cups besan(gram flour)
  4. Get 3-4 tsp salt
  5. Make ready 4-5 tsp red chilli powder
  6. Get 1 tsp turmeric powder
  7. Take 4 tsp lemon juice
  8. Get 2-3 tsp sugar
  9. Take 2 tbsp sesame seeds
  10. Make ready 1 tbsp mustard seeds
  11. Make ready 3-4 green chillies
  12. Make ready 10-15 curry leaves

Arbi patra (made with steaming colocasia leaves layered with gram flour batter ) is an ideal tea time snack Wash arbi leaves thoroughly in running water. Steps to make Arbi patra:
  1. Wash arbi leaves with water. Lighten it's thick veins with sharp knife. In a big utensil take besan and add salt, chilli powder, sugar, lemon, turmeric powder. Mix well and add water and stir well. At last add 2 tbsp oil and stir it again. And make a thick batter.
  2. Take a big flat thali facing back. Spread a big leaf facing back. Spread batter with fingers on all over the leaf. Place another leaf in opposite direction and spread batter again. Follow the same for another leaf. Place maximum three leaves over each other.
  3. Tuck them all together from four sides. Roll half half from two sides and stick them together. Repeat the same for all leaves. Do the same for cabbage leaves too.
  4. Pre heat a steam cooker. Place all patra rolls on a plate side by side. Cover them with lid.let them steam for 45 minutes or more. When it get cooked enter knife to check. Remove them when they get cooked. Cut them in slices.
  5. Half of them Now you can simply stir fry with sesame, mustard, green chilli, and curry leaves.
  6. You can stir fry same with cabbage leaves.
  7. A bowl of patra can deep fry. It will taste crispy and crunchy. It’s taste best with tea.
  8. Add some patra in ridge gourd curry. It enhance taste better.
