The spices is blended and rub over the chicken and slow roasted in coconut oil.and lastly garnished. For making the Nadan Chicken Roast, firstly grind together turmeric, chilli, coriander, pepper, garam masala powders, fennel seeds. Chicken cooked and roasted in spicy onion tomato gravy. A quite easy Kerala chicken roast preparation.
Steps to make Nadan chicken roast:
- In a pan, add red chilli powder, Kashmiri red chilli powder, pepper powder, turmeric powder, coriander powder, garam masala powder and coconut milk. Combine well.
- Then add chicken pieces and mix well. Switch on the flame and cook this chicken marinade until gravy become dry in medium flame. Switch off the flame. Keep it aside.
- Heat coconut oil in another pan, add grated coconut, curry leaves and saute it for 5 minutes.
- Then add ginger - garlic crushed and saute till raw smells disappear.
- Add chopped onions and salt. Saute till the onions become light golden brown.
- Add chopped tomato and cook till soft.
- Add the cooked chicken pieces to this masala and mix well. Roast it for 10 - 15 minutes.
- Garnish with curry leaves and serve hot!
It goes well with rice and chapathi / Indian breads. In this recipe the chicken is cooked in pressure cooker completely. So you don't have to worry about whether chicken is cooked or not…You are just frying the chicken to make it crispy. Clean and cut the chicken into medium size pieces.
