Instructions to make Sabudana Vada/Cutlet:
  1. Soak sabudana (soaking sabudana can be trickier sometime, there are various methods. I usually first wash once and soak it in water just above its level for about 5 to 6 hrs or overnight and then remove the excess water and set it aside; avoid using excess water while soaking).
  2. Boil potatoes and set aside. Then roast the peanuts and make it into powder (you can even coarsely grind it).
  3. Now take a big bowl, add soaked sabudana, mashed potatoes, ginger, coriander leaves, green  chilli finely chopped, grated coconut, peanut powder, salt (sendha namak, i.e. fasting salt/rock salt) and ghee (1 tsp).
  4. Mix well. Now pat some ghee on your palm. Take a small ball of mixture and pat it into small puri-sized cutlet/vada. Likewise do the remaining (If you want proper shape you can use round cutter after you pat the cutlets).
  5. Now heat a pan and brush it with ghee and when slightly hot place the cutlets/vada on the pan.
  6. Cook them till they are crisp from both side. Serve them hot with chutney or sauce.
