The spinach is blanched and then pureed. It's then cooked with spices and simmered on low heat with paneer. Palak (Spinach) Puri is a whole wheat fried bread made with many different flavors. Palak means spinach and paneer is cheese, curd cheese if we wanna get technical.

- Wash the spinach cut into pieces and boil.Purée it with the blender. Put aside
- Heat oil in a pan. Add onions and fry till golden brown.
- In blender add fry onion, tomatoes,2 green chillies,garlic cloves and ginger puree it put aside.
- In remaining oil add chicken fry till colour change add blended mixture.
- After 5 minutes add red chilli powder, turmeric powder, black pepper powder, crushed coriander,crushed cumin,salt, black seeds,whole spices, garam masala powder and dry fenugreek cook well.
- Add beaten yoghurt and lemon juice fry well.
- Now add blended spinach and cook 5 minutes on high flame add green chilies.
- Cook on low flame add garam masala powder, coriander leaves,ginger and lemon slices,Removes from the stove..
- Serve hot..
