- Take 10 colocassia leaves (arbi ke patte)
- Take For besan mixture
- Get 2 cups gram flour
- Take 1 tbsp oil
- Take 20 Garlic cloves
- Take 2 Garlic julienne
- Get 7-8 green chillies
- Prepare 1 tsp cumin seeds
- Take 1/2 cup fresh Coriander
- Take 1/2 tsp red chilli powder
- Get 1/4 tsp turmeric powder
- Take 1/2 tsp cumin powder
- Get 1 tsp coriander powder
- Get 2 tbsp tamarind water
- Take 1 tsp sugar
- Make ready as per taste Salt
- Prepare as required water for steaming
- Get as required Oil for frying

- Take 1 tbsp sesame seeds
- Make ready 2 tbsp freshly grated coconut

Patra or Paatra or Alu Vadi or Alu wadi is a popular maharashtrian and Gujarati snack made using colocasia leaves, gram flour and flavourings spices, tamarind, and jaggery, steamed rolls. Patra or Alu Vadi is also known as Aluvadi and is a tasty delicacy made with gram flour, ginger-chilli paste and a selection of spices.
Instructions to make Patra (Alu Vadi):
- Assemble the Ingredients required.
- For making patra, place a colocassia leaf with the vein side facing upwards on a clean dry surface and remove the vein using sharp knife. Now soak the leaves in clean water and prepare besan mixture.
- In a mixer jar add garlic, ginger, green chillies, coriander and cumin seeds and grind well. Now add salt and sugar and make a fine paste.
- In a bowl add gram flour, salt, red chilli powder, turmeric powder, cumin powder, coriander powder. Now add this prepared paste,oil & little water and mix well.
- Now add tamarind water and you will get this smooth fine thick consistency.
- Pat dry the colocassia leaves using a cotton or muslin cloth. Place the light green side of leaf facing upside. Now spread this besan mixture evenly using fingers.
- Now place second leaf similarly and repeat steps till the fifth leaf. On top again spread besan mixture evenly
- Now fold the leaves from both sides and start rolling up from bottom to top and again cover it with besan mixture.
- Place both the rolls on the steamer and cook for 25 to 30 minutes. You need to coat the steamer with oil so the rolls doesn't stick to the surface.
- Once it's ready it will be firm like this and color will be dark green. Let it cool for 10 minutes.
- Heat the oil for frying, cut the rolls into 1/2 inch thick slices and deep fry it on medium flame.
- It's ready to serve just garnish the patras with sesame seeds, grated coconut
