- Take 100gm fresh cream (thick malai)
- Make ready 1/4cup milk
- Take 1/4teaspoon turmeric (two to three pinch not more)
- Get 2+2 teaspoon ghee and oil
- Make ready 1/2 tablespoon spoon dried powder (masala)
- Get 1/2 teaspoon (dhaniya powder + jeera powder)
- Get For making dry powder or masala
- Make ready 2 teaspoon dried coriander seeds
- Make ready 1 cinnamon stick
- Get 4-5 cloves
- Get 3-4pinch cardamom powder
- Prepare 1/2 tea spoon cumin seeds
- Get Other ingredients
- Take 1/4teaspoon garam masala
- Make ready 2pinch cardamom powder
Methi is the main vegetable of this recipe and can be slightly bitter in taste. It is paired with flavor-filled and aromatic spices that are sauteed along with cashews, onion, and ginger. Methi & matar is a super-hit combination as their flavors complement each other well. A dash of malai and you are headed straight for a culinary heaven!
Instructions to make Methi Matar Malai (Jain):
- Boil green peas in hot water. Add some salt to it,..
- Remove the skin and cut the bottle gourd.. boiled in a cooker.. make a smooth paste..
- Soak cashews and melon seeds for 30 mints in hot water.. and make a smooth paste
- Wash fenugreek properly.
- Heat one spoon ghee + one spoon oil in a pan.. add 0ne spoon ginger chilli paste.. stir it.
- Add fenugreek..and saute for 2 minutes.
- Add boiled green peas+ 1/4 teaspoon garam masala+ pinch haldi powder (turmeric) and salt..
- Mix all ingredients and let it cooked for 5 mints.. now mix 50 gm fresh cream and off the gas flame.
- Now take a pan add 1 spoon oil + 1 dpoon ghee.. heat it. Add ginger chilli paste
- For dried powder.. roast all ingredients and make a powder..
- Add bottle ground paste.. let it cooked for 3-4 mints.add cashews paste + dried ginger powder (sonth powder +dried powder (masala)
- Stir and cooked properly.
- Add fenugreek and peas.. mixed it well…
- Add remaining fresh cream+ kasuri methi powder +cardamom powder + milk+ sugar.. : mix it well and saute for 5 to 7minutes on low flame.
- .. mix well making sure the cream is well combined.
- The curry turns creamy, adjust the consistency as required.(you can add water if needed)
- Be careful while adding salt and ginger chilli paste because we add salt and ginger chilli padte to methi as well as to green peas.
- Methi matar malai is ready
- Note: you can skip ginger paste
Methi Matar Malai is a bit sweet due to the cream & onions, but blends well with the bitterness of the methi. Methi (fenugreek) is known to protect heart.
