  1. Get 2 litres Milk
  2. Take 110 gms Sugar (may vary according to sweetness preferred)
  3. Prepare 100 gms vermicelli Fine
  4. Take 25 - 30 Almonds (blanched,peeled and slivered)
  5. Prepare 25 - 30 Pistachios ( blanched, peeled and slivered)
  6. Get 4 - 5 Dates (chopped)
  7. Make ready 3 tbsps Chironji (charoli nuts) (soaked and skinned removed)
  8. Get 100 ml Ghee
  9. Prepare ¾ tsp Cardamom powder
  10. Prepare 2 - 3 cardamom Green
  11. Prepare 2 - 3 Cloves
  12. Prepare Pinch of strands Saffron

Sheer Korma: Sheer Khurma is an authentic version of vermicelli pudding specially prepared for Eid festivities. 'Sheer' is Persian for milk and 'khurma' is another word for dates. Steps to make Sheer korma / sheer khurma:
  1. In a pan, heat 75ml ghee, sauté slivered almonds, pistas, chirongi and dates till golden(but not burnt), remove and keep it aside
  2. In same pan, roast vermicelli till golden (but not burnt), keep it aside
  3. In heavy bottom pan, bring the milk to boil
  4. Once start boiling, add cardamom powder and simmer on low heat till milk turns pink in color
  5. Add sugar, saffron and stir till sugar dissolves
  6. Add roasted vermicelli, and dry fruits and simmer for another 8-10 minutes, stir occasionally to avoid burning
  7. In a small pan, heat the remaining ghee, add green cardamom and cloves and fry for 30 seconds
  8. Pour the tempering over the prepared sheer kurma
  9. Dish out, garnish with few saffron strands and serve hot
