  1. Get 2 litres Milk
  2. Make ready 110 gms Sugar (may vary according to sweetness preferred)
  3. Make ready 100 gms vermicelli Fine
  4. Take 25 - 30 Almonds (blanched,peeled and slivered)
  5. Take 25 - 30 Pistachios ( blanched, peeled and slivered)
  6. Prepare 4 - 5 Dates (chopped)
  7. Prepare 3 tbsps Chironji (charoli nuts) (soaked and skinned removed)
  8. Make ready 100 ml Ghee
  9. Take ¾ tsp Cardamom powder
  10. Make ready 2 - 3 cardamom Green
  11. Take 2 - 3 Cloves
  12. Get Pinch of strands Saffron

Instructions to make Sheer korma / sheer khurma:
  1. In a pan, heat 75ml ghee, sauté slivered almonds, pistas, chirongi and dates till golden(but not burnt), remove and keep it aside
  2. In same pan, roast vermicelli till golden (but not burnt), keep it aside
  3. In heavy bottom pan, bring the milk to boil
  4. Once start boiling, add cardamom powder and simmer on low heat till milk turns pink in color
  5. Add sugar, saffron and stir till sugar dissolves
  6. Add roasted vermicelli, and dry fruits and simmer for another 8-10 minutes, stir occasionally to avoid burning
  7. In a small pan, heat the remaining ghee, add green cardamom and cloves and fry for 30 seconds
  8. Pour the tempering over the prepared sheer kurma
  9. Dish out, garnish with few saffron strands and serve hot
