  1. Peel the karela's skin and cut both the ends of each karela.
  2. Now add around 1 to 2 tbsp salt on the karela and rub the salt properly on the karela with the hands and keep the karela aside for about half an hour. It helps in removing the bitterness of karela.
  3. After half an hour wash the karela throughly in running water, rinse well and keep them aside after that.
  4. Now grate the onions in a grater and squeeze the excessive water from the grated onions with the help of hands.
  5. Now grate the unripe mango pulp as well and mix it with the grated onions.
  6. Now add turmeric powder, red chilli powder, corriender powder, garam masala and salt to the onion and mango mixture and mix them well.
  7. Now fill the karela with the onion stuffing quite well from the slits with the hands.
  8. Now in a wok, heat the oil nicely.
  9. After that add the fennel seeds to the oil and let it splutter. Then add the karela one by one and carefully to the oil.
  10. Cook the karela on high flame for 5 minutes and after that low the flame and cook the karela slowly and stir them slowly in the mean time so that every side of the karela cooked properly.
  11. Now cover the wok lid and in every 7-8 minutes checked the karela and stir them carefully so that the stuffed coudn't come out. Cook the karela till there skin become soft and fried completely from inside and outside.
  12. Serve them hot with desired chappati or parantha.
