Instructions to make Ginger Fried Rice:
- Chop the carrots, bell peppers, onions, coriander. Mince/pound the garlic and ginger
- Add onions in a pan and cook until they start to brown. Add salt and black pepper
- Add in the bell peppers, and carrots
- Cook until they start to soften. Do not overcook the vegetables because you want them crunchy. Remove and pour the cooked veggies in a plate
- In the same pan you fried the vegetables, add more oil and the crushed ginger and garlic. Cook until they start to fragrance
- Add in the cooked rice
- Pour in the cooked vegetables
- Mix the cooked rice and the vegetables for a few minutes. Add in the soysauce
- Cook for several minutes to let the ingredients meld into each other and to heat the rice. Remove from heat and serve immediately. You can eat plain or with stew
After making the dish the amount of garlic didn't seem excessive to me, but use your judgment.
