  4. Prepare 1 diced onion
  5. Get 56 oz crushed tomatoes (2-28 oz cans)
  6. Prepare 1 salt and pepper to your liking

It's so good, that you can actually eat it by itself as a meal and not as a side-dish. My mom has been making today's Spanish Rice recipe for as long as I can remember and first showed me how to make it several years ago (along with empanadas, enchiladas and tacos). Now, we make it on a weekly basis because my kids are obsessed and it's just so easy. This is very close to my mom's recipe with a few verations.

  1. Brown hamburger, drain grease.
  2. Saute onion and rice in butter over Meduim heat. Be careful not to burn rice.
  3. Add hamburger to rice and onion
  4. Add crushed tomatoes. I also fill each 28 oz empty can with water and add. This will cook your rice.
  5. Bring to slow simmer, stir often so rice does not stick. I usually cook it for a hour. You may need to add additional water while cooking.
  6. Salt and pepper to your liking.

First my mom does not use chic stock, corn, or olives. She cooks bacon in large cast iron skillet. leaves all grease in it and adds onions, grn peppers, fresh. My mom is a phenomenal cook. Growing up she would regularly make dishes from all around the world and it's no wonder I've acquired the same passion for international cuisine.
