  5. (If you didn't do the sauteed veggies) Continue to stir fry half of the onions until darker brown. Set aside.
  6. After 15 minutes, taste the lentils-rice. It should be tender and look humid (not dry). If it's crunchy, leave it a bit longer.
  7. To serve, add the darker brown onions or the sauteed veggies to the mix. And voilà!

While draining save some lentil water, as we will use this water. Dried lentils are a year-round staple in my pantry, essential for rounding out salads during hot weather and hearty soups in the winter months. Regardless of the season, their quick-cooking, no-soak-required nature makes them ideal for healthy weeknight meals. Transfer the lentils to a large bowl. Remove the saucepan from the heat.
