Maharashtrian Tendli bhaat is a traditional no onion no garlic masale bhaat or a one pot meal, typically made during gatherings or special occasions. Gluten intolerant people can either skip completely or opt for Gluten Free Asafoetida (Hing). Ivy Gourd Rice (No Onion No. 'Tendli' means ivy gourd and 'bhaat' means rice in Marathi. This healthy one pot rice dish can be made for lunch or dinner and can be served with plain curd or with a raita of your choice.
Steps to make Tondali Bhaat (Ivy guard Rice):
- Assemble all the basic ingredients and soak rice in some water
- Heat ghee and add jeera, asafoetida, green chilli and garlic paste. Saute' for sometime and add finely chopped onion, saute' till transparent. Now add soaked rice (remove excess water from rice) saute' for 5 minutes
- Now add turmeric powder, vertically chopped ivy guard, green peas, goda masala and salt according to taste. Mix well and saute'for some time.
- Add 2-3 cups of water and half of grated coconut mix well. Cook covered till done. Check and turn in between.
- Lastly, garnish with some chopped coriander and freshly scrapped coconut and serve hot immediately with raita, chaas or curd
