  13. Prepare As per taste Salt

Steps to make Kolhapuri Misal Pav:
  1. First in a bowl add sprouted matki, turmeric, salt and water and pressure cook it.
  2. In a pan add oil. Add chopped onion, tomatoes, ginger, garlic. Saute it for 5 mins and let it cool.
  3. After cooling grind it.
  4. In a kadai add 4 tbsp oil, mustard seed, cumin seed, hing and curry leaves. Add red chilli powder and turmeric powder and immediately add the onion tomato paste.
  5. Saute the masala till it leaves oil at the side. And then add water, salt, goda masala, misal masala (see my page for misal masala recipe) and jaggery. And let it simmer for 10 mins.(jaggery enhance the taste of misal but it's optional).
  6. Add the boiled matki and again let it simmer for 10 min. You will see the oil layer on the curry. This is called tari. You can keep 2 bowls of this tari beside before plating the misal pav.
  7. Now arrange your plates and add the misal.. garnish it with mixed farsan, onion, lemon and coriander leaves. Serve it with pav.
