- In a large kadai, Heat oil and add bay leaves, cumin,cashews and hing.And Roast it for few minutes. Now add the curry leaves, green chillies and turmeric powder and roast it again.
- Now add the ivy gourd and potatoes. Add the ground spice mix to it and fry it.
- Add the soaked rice and fry it for few minutes. Add 4 cups of hot water to it and cook it till done. Add salt, little sugar and lemon juice to it and a generous spoon of gheer
- Finally when water is dried.Harnish with handful of coriander leaves and shredded coconut and serve hot with raita.
