- Soak the leaves with salt and turmeric. Keep aside for half an hour. Wash twice or thrice till all the dirt goes off. Then chopped the leaves and keep aside.
- For pakodas : In a bowl combine gram flour, salt, ajwain, turmeric powder and water. Mix….properly like a pakoda batter. Heat refined oil in Kadai. Fry one spoonful batter one by one till it become golden brown in color. Once it is done. Transfer to a plate.
- In the same Kadai. Add pachphoron and 1 dry red chilli(1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp onion seeds, 1 tsp mustard seeds and 1 tsp meh I seeds) this is called panch phoron. Fry for few minutes. Add chopped potatoes fry it for few minutes. Add Turmeric powder, cumin powder, red chilli powder, 1 tsp green chilli, ginger, garlic paste. Fry for few minutes.
- Then add bhatua leaves. Cover and cook till the potatoes and leaves become tender. At last add pakoda. Cook for few minutes. Once it is done. Add coriander leaves. Once it is done.
- Transfer to a serving plate. Ready to serve….with phulkas and steam rice with mong dal.
