- Prepare 1/2 kg Mutton pieces
- Make ready 1/4 cup Curd
- Take 1 tsp Ghee
- Take 1/2 tsp Ginger garlic paste

- Make ready 1 1/2 cups Seeraga Samba Rice
- Get 1 tsp Ghee
- Make ready 2 tsp Oil
- Prepare 1/4 inch piece of Cinnamon
- Make ready 2 Cloves
- Take 1 Cardamom
- Take 2 Medium sized Onions sliced
- Take 10 Shallots roughly chopped
- Take 2 Green Chillies,slit
- Get 2 Medium size Tomato chopped
- Make ready 1/2 tsp Ginger garlic paste
- Make ready 1/2 tsp Turmeric powder
- Take 1 1/2 tsp Chilli powder
- Prepare 1 tsp Coriander powder
- Get 1/4 cup Coriander leaves without stem
- Make ready 1/4 cup Mint leaves
- Make ready 1 Tbsp Curd
- Prepare 1 Tbsp Lemon juice
- Prepare Salt-as per your taste
- Take 1/2 tsp Biriyani Masala
- Get 3 cups water (include mutton boiled water also)
Authentic Ambur Vaniyambadi style Mutton Biryani Recipe. Hyderabadi Mutton Biryani Recipe, How To Make Hyderabadi Mutton Biryani. A distinctive biryani full of flavour but low on spiciness and heat. Fragrant rice and soft mutton get together in this classic Calcutta biryani dish.
Instructions to make Mutton Biriyani:
- Add the ingredients in a bowl given for marination (except water) and marinate for 30mins.
- Wash and soak the rice for half an hour.
- Add the mutton pieces in a pressure cooker and pour required amount of water till mutton pieces soak. Place it in the stove.
- Cook for 1 whistle in high flame. And then keep in medium flame for 20 mins.
- Place a heavy bottom curry pan in the stove. Switch on the flame. Add 1/2 tsp ghee and oil.
- Once oil gets heat add cinnamon,cloves and cardamom. Fry it.
- Then add onions and green chillies. Saute until onions becomes translucent.
- Then add ginger garlic paste and mix for a minute. Add tomatoes. Mix well.
- Add turmeric powder, chilli powder and coriander powder. Saute well until tomatoes becomes mushy. Do not burn.
- Then add only the cooked mutton pieces. Keep the mutton boiled water to add it atlast.
- Add coriander leaves and mint leaves. Mix well.
- Add 3 cups of mutton boiled water. If it's not enough you can add plain water.
- Then add the washed rice,curd,lemon juice,biriyani masala and salt. Mix well. Wait until it boils.
- Cover and cook in medium flame for 2 mins.
- Meanwhile place a dosa tawa in another stove heat it.
- Then open the curry pan mix well and place it above the hot dosa tawa. Cover the curry pan with a white cloth and cover with a lid above it. Keep in medium flame for 10 mins.
- Then switch off the flame. Open the lid take off the cloth. Mix the rice and add 1/2 tsp Ghee above it.
- Again cover with the cloth and close with the lid. Leave it for 10 mins in that tawa heat itself. This is Dum stage.
- After 10 mins mix the rice well. Biriyani is ready to serve. Serve hot with onion raita and dalcha.
