This Baked Malai Kofta recipe is a healthy take on the popular Vegetarian curry. Malai Kofta is a Mughlai Speciality dish made with Deep fried Potato Paneer Balls simmered in Spiced Onion Tomato. Malai kofta is a popular as well as most sought after vegetarian Indian dish in restaurants. These tasty paneer kofta are dunked in a smooth, mildly sweet and lighted spiced curry.
Steps to make Malai kofta curry:
- For curry–In a pan add oil and butter. Heat it well.
- Then add cinnamon, bay leaf, cloves, black cardamom, cumin seeds saute it
- Then add chopped onions, chopped chillies, chopped ginger, chopped garlic and cook lightly
- Then add turmeric powder, coriander powder, cumin powder then saute quickly.
- Add tomatoes double to onion and some cashewnuts. Salt to taste and mix it well.
- Then add water cook for a few mnts till tomatoes turns softened.
- Then blend it smoothly after cooling.
- Put the blended puree on a pan cook for some time.
- Then add some cream or malai mix it well and spread some crushed kasturi methi.
- For koftas….take a bowl. Add mashed paneer, mashed potatoes, chopped coriander leaves,chopped green chilli, chopped ginger, cornflour, salt, crushed dry fruits
- Mix all ingredients and shapeit according to your choice and then fry all the koftas deeply.
- For Plating–put all koftas in a bowl then add curry on the koftas then garnished with green coriander leaves and fresh cream.
