Then, I decided to take coloring eggs with vegetable scraps a step further and created a larger palette. Gather your ingredients: You can make separate batches of different colors or one large batch of a single color. Follow the ratios given above for each ingredient to make more or less dye. - Firstly wash then soak the rice in plenty of water fo' half an hour
- Stir fry all the chopped veggies one by one fo' 30-30 seconds and keep aside in a plate
- Take a non stick frying pan and heat clarified butter/desi ghee in it..splutter cumin seeds in hot ghee fo' 30 seconds..add cinamen stick, nutmeg powder, mace, cardmum powder,black pepper powder and toast fo'about 30seconds..add 4 cups of water or(acc.the quality of rice how much water it takes),salt and bring to a boil
- Add rice into the boiling water and let it to cook on low heat by covering with a lid on the pan fo' about 10-15minutes..squeeze lemon in the rice in between the cooking process so that they don't stick together
- When the rice cooked about 3/4th then add stir fry veggies and slightly mix in the rice and let to cook the veggies with rice fo' another 5 minutes
- Take another pan and stir fry 2-3 small slices of beetroot then add beet juice and 4-5 spatulas of semi cooked rice in it and let the rice absorbed (cooked) with beet juice fo' about 5 minutes..flame off
- Yo'r pink rice with multiple of colored veggies is done
- Transfer the veggies contained cumin rice in a 2" deep plate and press it then flip on a serving plate by holding and turning upside down with yo'rself palm
- Transfer the beet rice in a star shape mould and press with same process as do with cumin-veggies rice
- Flip the star mould over cumin rice layer quite carefully
- Decorate with baby corns,red bell pepper diamonds and broccoli florets
- Serve hot with mint curd or yo'r favorite pulses
