'Varutharacha Mutton Curry' is one of the most famous traditional dishes in Kerala. varutharacha kadala curry is a very common curry made in Kerala as a side dish for appams, puttu, idli and dosa. Steps to make Varutharacha Kadala Curry:
- Soak Green Chanain four cups water over night. It’s better to give it 6-8 hours time.
- Take the green Chanafrom water after it is soaked overnight and put it into a pressure cooker.
- Add ginger garlic paste, green chillies,turmeric powder, two teaspoons coconut oil and crystal salt as required. Now add four cups water. Let it be cooked for duration of 5 whistles.
- Meanwhile, take a pan and pour four tablespoons coconut oil. When it gets heated, add 6 shallots, Garlic cloves, coconut pieces, 4 curry leaves and crushed red chillies and coriander powder. Stir well.
- Now turn off the pan. Put the mixture in a mixer grinder. Blend it till a paste is formed. Shallot will help you to caramelise the mixture. If required, you can add water to the blender.
- This mixture is the base for your curry.
- Once your green Chanais cooked, Open the pressure cooker. Now, add the mixture of masala to the pressure cooker. Stir well.
- Take the pan. Heat it and pour oil. Now add mustard, remaining curry leaves and shallots. Once it is golden brown in colour, pour it to the cooker. Stir well.
- Your delicious Kadala Curry is ready!! It’s usually savoured along with Steamed Rice Cake of Kerala (Puttu). It also goes well with chapati and rice.
